Background

Background

From Latin: To pick out, select or choose the best. Echoing its Latin meaning, Eligo is a vineyard selection from our finest shiraz parcels, including some centenarian vines. Barossa Valley components are selected for their structure, depth of flavour and length on the palate. Eden Valley components included for their lifted, spicy aromatics, elegant fruit profiles and balanced acidity.

Conditions

Conditions

Dry conditions for the second year in a row presented some challenges, with yields again well down. Despite the dry conditions, February and March were cooler than average, providing a long and even ripening period. The resulting wines are of very high quality, with great purity and depth of fruit. 2020 Eligo was sourced from the following vineyards: Krondorf (Stoll) Ebenezer (Hoffmann) Moculta (Fechner) and Mt McKenzie (Knight/Severin).

Winemaking

Winemaking

The parcels of fruit were fermented separately in small stainless-steel fermenters, some with submerged caps. Owing to miniscule yields, we were very careful in managing tannins, so shiraz this year generally spent less time on skins, around 7 days.

Maturation

Maturation

Post classification, the component wines were matured in oak for 18 months (51% new fine grain French oak hogsheads and the balance in seasoned French oak hogsheads).
